About Your Consultant

Dr. Kaitlyn Casulli, founder and owner of Risk Busters, LLC, is a food manufacturing engineer who previously held a faculty role at University of Georgia. She holds a PhD and MS in Biosystems Engineering from Michigan State (Go Green!) and a BS in Food Science from NC State (Go Wolfpack!). Her efforts focus on product and process development for value-added food manufacturing to ensure safe, wholesome foods. She is currently assisting small food companies and farmers in Georgia reach value-added markets, and she has a particular interest in revitalization of rural communities through food manufacturing - however, her service area is not limited to Georgia! Kaitlyn’s reasearch projects have focused on validation of alternatives to thermal processing, including high pressure processing and cold-fill-hold methods, and novel food product development for Georgia commodities. She is a process authority and can assist in validating new preservation processes. Kaitlyn has also provided leadership for workshops focused on food processing and food safety, including Better Process Control School, HACCP, and PCQI for Human Foods. Her experience with helping Georgia food entrepreneurs has helped her to understand community needs and tailor her programming to serve emerging and growing food companies. When she is not helping food companies reach their goals, Kaitlyn enjoys checking out breweries in her travels, supporting her sports teams through feast and famine, camping, and spending time with her dog, Porter, a frequent visitor on conference calls.
